Easy Bison Jerky Loaded Baked Potatoe Casserole (Can be made with our Bison Bacon)

Easy Bison Jerky Loaded Baked Potato Casserole

*Recipe from Jerky Direct


10 Idaho Russet Potatoes, peeled and halved

1 bag Jerky Direct Buffalo Jerky

1 1/2 cups shredded Cheddar Cheese, divided

1 cup evaporated milk

1/2 cup sour cream

1 teaspoon gruond black pepper

1 cup sliced green onions, divided

1/2 cup shredded Cheddar cheese


Preheat oven to 350 degrees (175 C). Lightly grease a 9x13 inch baking dish. Place potatoes in to a large pot and cover with salted water, bring to a boil. Reduce heat to meduim-low and simmer until tender, about 20 mins. Drain and return potatoes to pot. Use scissors to cut buffalo jerky into small squares and bits. Combine 1 1/2 cup Cheddar Cheese, evaporated milk, sour cream, salt, and black pepper in the pot with the potatoes. Mash with a potato masher until creamy. Spread potato mixture nto prepared baking dish. Bake in preheated oven for 25 mins, sprinkle with Bison Jerky, green onions, and remaining 1/2 cup Chedder Cheese. Return to the oven and continue baking until cheese is melted, about 5 mins more. ENJOY!

Miss Mary's Meat Balls

Preheat oven to 350 degrees

1 lb Groun Bison or Elk

1 envelope Lipton Dry Onion Soup Mix

1/4 cup on grated Parmesan Cheese (canned or fresh)

1/4 cup bread crumbs or Panko crumbs

1 egg


Mix all ingredients together, form balls, place on cookie sheets and bake at 350 degrees for approx 20 mins or untill done.

Can be used for:

*Spaghetti Sauce

*Meat Ball Sandwiches

*Mix BBQ and Grape Jelly and poor over for a tangy sweet Meat Ball

*Just Plain, their Delicious!

Bison Strip-Steak with a Spicy Red Onion Marmalade

From Blue Canyon Kitchen and Tavern, Cleveland, OH – Chef Brandt Evans

8-10 oz Bison Strip Steak

4 medium Red Onion1

½ c Sugar

2 T Red Curry Paste

1 can of Unsweetened Coconut milk

1T minced Garlic

1T chopped fresh RosemaryMethod


Season Bison Strip Steak with salt and black pepper generously on both sides.

Place on heated grill; cook each side for about 5 minutes to achieve a Medium Rare to Medium or to about 130 internal temperature.

In a sauce pot add olive oil and sauté onions, garlic till translucent.

Add sugar and coconut milk and curry paste (if you do not like spicy food then do not add Curry Paste or cut in by half) and whisk until paste is dissolved.

Reduce until you have a thick glaze consistency, fold in fresh chopped Rosemary.

Place Steak on plate and top with the Red Onion Marmalade and serve.

 


Beer Braised Bison Enchilada Filling

Beer –Braised Bison Enchilada Filling

3pounds bison Sirloin (lesser cut will work)

Koshersalt

CrackedBlack Pepper

1TBS Olive Oil

1medium white onion, diced

4cloves garlic, minced

1TBScumin

1TBSChile de arbol (ground Chile pepper)

1bay leaf

1TBS chili powder

1bottle beer

2cups low sodium beef stock


Preheatoven to 350 degrees. Place bison on cutting board, and season with salt andpepper to taste. Heat olive oil in a Dutch oven over medium-high.  Sear bison on both sides for 2 minutes oruntil golden in color. Move bison to a cutting board.

Addonion to Dutch oven, sauté 3-4 minutes, stirring. Reduce heat to a medium. Addgarlic and sauté for 2-3 minutes, continuing to stir so garlic will not burn.Add cumin, chili de arbol, bay leaf and chili powder; cook 2 more minutes.

Addbeer and stock to deglaze pan. Stir. Season with salt and pepper to taste. Addbison and place lid on top. Put in preheated oven and cook for 4 hours.

Makes8 servings
